It is understood that ducks are picked or skinned and cleaned. Ducks and/or geese should be soaked overnight in salt water (changing the water several times) in a non-conductive container or resealable plastic bag. An even better idea is to soak in brine water for 4 to 6 hours, then soak overnight in a marinade. Always soak or marinade with covered or plastic bag sealed in the refrigerator. It is very "chancy" to leave un-cooked waterfowl at room temperature. Bacteria are always present and grows rapidly at room temperature.
