TEXAS SLAW

4 cup green cabbage, shredded
1 cup Cheddar cheese
1 cup red cabbage, shredded
3/4 cup commercial ranch dressing
1/4 cup purple onion, chopped
2 Tbls fresh cilantro, chopped
1 Tbls fresh lime juice
1 can (4-oz) chopped red and green peppers, drained
1 tsp cumin

In a bowl combine cabbages, onion, cilantro, peppers and cheese. In a bowl combine salad dressing, lime juice and cumin; blend well. Pour dressing over cabbage mixture, toss to coat. For hotter slaws chop 2 jalapeno peppers and add to cabbage mixture. Yield: serves 6 to 8
